The research activities of the Institute focus on the nutritional assessment of foods and their constituents with particular reference to health aspects. Primary importance is attached to elucidating the functional correlation between nutrition and the physiological functions of cells, tissues, organs, and the total organism. The research goal is to provide consumers with dietary recommendations aimed at promoting good health.
The physiological effect of nutrition is investigated in complex foods, in isolated, precisely defined substances, and in cocktails of substances. Furthermore, intervention studies with human volunteers, feeding studies with laboratory animals, and investigations in isolated organs and cells are performed. Research is primarily geared towards determining the functional effects of phytochemicals of food, e.g. fruits and vegetables. Physiological parameters, bioavailability, and metabolism are assessed and their role in disease prevention elucidated. The Institute also strives to clarify the relevance of genetic polymorphisms on bioavailability, metabolism, and functional activity of phytochemicals as well as on the development of nutritionally related diseases.
The Department of Nutritional Behaviour is dealing with the continued collection and evaluation of activities carried out alongside the food chain whereas the consumer in his every day life situation is at the centre of attention. Daily nutrition behaviour and its motives are investigated as well as the effects of consumer information. Furthermore, basic principles for the communication with consumers in terms of health keeping and promoting nutrition are compiled.
The Institute is supported by the German National Nutrition Survey (NVS II), the German Nutrition Monitoring (NEMONIT) and the German Nutrient Data Base (BLS). Together with these projects the Institute provides a solid base for political consulting in the field of preventive consumer protection and arrangements in nutrition politics. In light of the current nutrition situation the research work in this political field of the Federal Ministry of Food, Agriculture and Consumer Protection (BMELV) is evident.
